Cook the batter
In a skillet melt half of the butter over medium heat. Pour the batter into the skillet and cook for about 5 to 6 minutes, or until the bottom is golden brown. Optionally, sprinkle drained rum raisins over the batter. Flip the Emperor’s Mess at once. An easier way is to divide the pancake into quarters and flip every quarter. Add the remaining butter and cook for 4 minutes, or until the bottom is golden brown. Using two spatulas or forks, tear the pancake into bite-size pieces to create the famous mess.
