Austrians love desserts! I would say for us the dessert is the most important course in a multi-course dinner. Sometimes we eat desserts as a main course – you can truly say we are dessert lovers! Stewed apples is a light and simple dessert. But my absolute culinary delight is Emperor’s Mess with stewed apples. On my parents’ farm we had lot of apples besides making apple cider we preserved stewed apples. During the winter we always had a fruity and tasteful dessert.

- Prepare the ingredients. Wash, peel, quarter and core the apple, cut into slices. In a saucepan combine all the ingredients sliced apples, vanilla sugar, brown sugar, some lemon peel, cinnamon stick and water.
- Stew the apples Bring ingredients to on high. the saucepan to boiling high. Once boiling, reduce the heat to low. Cover and cook for 15 minutes until the apples are tender. Remove the cinnamon stick and the lemon peel. Serve stewed apples hot or cold.
My little secret
If you prefer apple puree, remove some water and blend the stewed apples.
